Exodus 12:8 That same night they are to eat the meat roasted over the fire, along with bitter herbs, and bread made without yeast.
They were slaves about to be freed. The meat came from the animal that gave it’s blood for the announcement that they were of the “people”. The bitter herbs should have spoken to the pain of the lives they had come to as slaves. And the bread was the foretelling of freedom that was there shortly. I am not sure that many of us really face the reality of our gift of freedom from sin and it’s power. Because we still squabble over clothes, money, attractions and various aspects of the lure of sin in our lives and seem to gloss over the fact that our sin is paid for by the cross. The freed slaves needed an event to show them the depth of their release, we have the cross and still miss the depth of our freedom much of the time. Eat those bitter herbs.
